Banana and Zucchini Loaf

The Recipe!

Ingredients

  • 3x bananas (very well ripened)
  • 2x zucchini (grated)
  • 2x eggs
  • 2x cups flour (can be gluten free or whole meal)
  • 1x t baking soda
  • 1x t cinnamon
  • Pinch salt
  • 1/2 x cup coconut sugar
  • 1x t vanilla
  • 1/4 x cup olive oil
  • 1/4 x yoghurt
 

Method

  1. Turn oven to 180 degrees 
  2. Grease & line loaf tin with baking paper
  3. Mix together dry ingredients
  4. Mix together wet ingredients & bananas
  5. Grate zucchini & squeeze out the water content
  6. Add everything together & put in loaf tin
  7. Bake 50-60 minutes
 

Serve warm or cut up into slices for freezer
