Lemony Salmon and Potato Traybake 

We love these creative and yummy tray bake recipes that make dinner fun and so easy!

Ingredients:

Method:

  1. Preheat the oven to 200°C fan-bake.

  2. Cut potatoes into rounds and broccoli into florets and spread evenly across a lined oven tray. Toss with a drizzle of olive oil and season with salt and pepper. Bake in the oven for 18 minutes to start with.

  3. Whilst potato bakes, toss beans in a bowl with olive oil and season with salt and pepper. On a board, coat salmon with olive oil and season with salt and pepper. Slice lemon, then top the salmon with lemon slices.

  4. After the potato and broccoli has cooked for 18 minutes, add beans to the tray and spread out across the potatoes. Top with salmon fillet and sprinkle over walnuts. Return to the oven to cook for a further 7-8 minutes for medium rare, or until cooked to your liking.

  5. Serve rocket on your plate topped with all the goodness from the tray bake. Squeeze over lemon juice.
