You can’t beat a vege frittata! Whether it’s served hot or cold it’s the bees knees! Plus it’s hard enough at the best of times to get kids eating all their greens!! Why not hide them in a frittata, they’ll never know!

The Recipe!

Ingredients

  • 3 x zucchini (grated)
  • 1 x carrot (grated)
  • 1/2 x cup broccoli (finely chopped)
  • 3 x rashers bacon
  • 1 x onion (finely chopped)
  • 1/2 x cup grated cheese
  • 6 x free range eggs
  • 1/2 x cup ground almonds
 

Method

  1. Turn oven to 180 degrees & grease plus line a slice tin
  2. Fry off onion & bacon
  3. Take off heat & add vegetables
  4. Add ground almonds & stir through
  5. Lastly add eggs & cheese – mix until combined
  6. Pour into slice tin & bake 25mins or until golden brown
  7. Serve warm or cold for breakfast, lunch or tea
